Our Story

Chef Brian Appiano grew up in the Bay Area but stayed on the Central Coast after graduating from Cal Poly San Luis Obispo. He started cooking creatively in college, feeding his Phi Kappa Psi brothers, and used those skills to win over his wife, Krystal. Brian loves making dishes from scratch with his own recipes to create memorable experiences. He and Krystal now own two Rib Line locations, Sunsets at Pismo, and The Switch in San Luis Obispo. With awards, TV features, and a World Food Championship win, Brian also brings his award-winning cooking to catering events across the Central Coast.

We have won first place in 23 out of 28 food cook-offs from here to Orlando, Florida competing in chili, bacon, mac n cheese, and oysters with our most proud award being at the World Food Championships in Las Vegas, Nevada for People’s Choice Chili.

Quality Ingredients

Throughout the year, we purchase a wide range of food items from various farms and manufacturers in order to provide tasty meals made with fresh, in-season ingredients. At The Switch, we thoroughly evaluate potential items to ensure that they meet our quality standards for raw materials, additives, allergen content, processing and preparation techniques, and quality control performance. We only buy and use ingredients that have been proven to have “The Switch’s quality.”

I started making house-made sauces for Vito’s Pizzeria up in the Bay Area back in high school and continued along the Italian food path while attending Cal Poly for my economics degree with a concentration in marketing. From tossing and cooking wood-fired pizzas for the original Cuginni’s to making pasta for Upper Crust, I just loved the kitchen and creating flavors. I re-opened the original Rib Line on LOVR about 8 years ago, tweaked old recipes, upgraded the products and focused on quality.
